I always say that the summer is too hot for soups, stews and chili. But the last week or so has been relatively cool, and when you think of Mexican food in general — they don’t wait for the winter to have their spicy foods! Now, my attempts at chili are a far cry from true Mexican dishes, but it’s all done in the spirit, as I always say. But I’ve been having a lot of tomatoes lately, as well as ground beef. I wanted a change, but wanted something in the spirit of Mexican-styled food. Then I stumbled across an article about white chili: chili that’s made with a broth, thickened with beans and with chicken (usually) as the meat.
I’ve been concerned about how much pop (for my American friends, soda) I drink. I only drink ginger ale, but of that, I drink regular pop, not diet pop. The reason? I have bad reactions to artificial sweeteners. Aspartame gives me nasty, nasty migraines and I find that Splenda gives horrible body pains. So I figure, sugar is the lesser of the evils, so to speak. But really, pop isn’t the best when it comes to beverages. While I won’t cut my ginger ale right out of my diet, I have been looking for other alternatives. I love water, but it gets boring sometimes. Often, I’ll resort to tea, as I love tea and it’s better for me than pop.
But then the hot, sticky weather slammed into my neck of the woods and it’s left me very uninterested in hot tea. What’s a girl to do in the hot summer months when she’s trying to cool off?
Have you ever woken up, been hungry and looked at the usual suspects for breakfast in boredom? Eggs and bacon getting old? Is cereal dull and lifeless? Bagels just aren’t doing it for you anymore? I found myself in this state today and was really aching for something different. I wanted something bright and vibrant and full of flavour and nutrition, but I really didn’t want another omelet. Don’t get me wrong; I love omelets! But I’ve had so many recently that they have ceased to be a “treat” for me, which is so very sad.
I considered what I had in the fridge and pantry that might need to get eaten up quickly as I’m the type of person who doesn’t mind having breakfast for dinner and dinner for breakfast. Heck, I’ve even had cold, leftover Chinese food in the morning because, gosh darn it, that’s what sounded palatable at the time!
Recently, I asked my hubby to pick up some asparagus for us. He came home with not one, not two, but three bunches. That’s a lot of asparagus! Continue reading →
