We all end up with leftovers at Christmas (or whatever holiday you celebrate!), don’t we? I know I do. Not only did we have leftover chicken from our Christmas-Day-at-home this year, but also turkey that Mom sent home with us the night before. We had an entire veggie tray that was just going to waste, too. So, I put on my thinking cap, set my big stew pot on the stove and started to clean out the fridge. Here’s what I did…
Hubby and I love pizza, but unfortunately get bored with order-in pies sometimes. So earlier this week, I had marinaded some chicken in extra virgin olive oil, thyme, pepper, garlic and orange juice, then cooked this up and used it as the main meat on individual pita pizzas. After making four of these little mini pies, I still had a lot of extra chicken left over.
What on earth was I going to do with it?
With all the rain that we’ve had this week, I’ve had a real desire for comfort food. What says comfort more than soup? So I cracked open the fridge to see what I had. Luckily for me, I had some really great ingredients such as fresh broccoli, cauliflower, onions, celery and light cream (5%). I thought to myself, “Why not make a pureed soup??” So I did!
