Sometimes, you want a certain taste or dish, but you don’t want it done the “same old way”, right? I was feeling that way about fajitas and tacos. I love them, don’t get me wrong, but I was wanting them done up some other way. I considered a casserole version but then I poked around online and saw a recipe for a cheese, broccoli and chicken stuffed wreath made out of crescent roll dough and thought, “Ah ha! This is what I’m looking for!”
Also, just a note: I have a tendency of using fajita seasoning instead of taco seasoning, even when we’re having tacos. It’s a personal preference. Use your own. 🙂
This one’s an old family favourite for me. It’s one that we had very frequently as kids and I always looked forward to it. It wasn’t until recently that I said my mom, “Remember when you used to make hamburger hash for us? I used to love that and haven’t had it in years!” My mom told me she had, ironically, just made it a few days prior. So I asked her, “How do you make it??” I said, “Do you first brown the meat–?” She cut me off and said, “Oh, god no! That’s too much work!” or something very similar. She told me how she did it all those years ago and now I’m going to share with you how I made it recently for my hubby and myself.
Oh, but wait. What is hamburger hash, you ask? Oh! It’s not like a breakfast hash made with potatoes. It’s more like a ground beef stew that’s poured over mashed potatoes. When I was a kid, it was made with onion and ground beef and was in a really thick gravy. I imagine it was a favoured dish because it was relatively cheap and easy to make — which of course made it really easy to feed a family of four on a budget and without having to spend hours in the kitchen. Sometimes, you just want a burger. Last week, I was craving burgers so much that I almost caved and went to McDonald’s. *shudders* No. No. I’ve sworn off of that place, honest! I think in the last year, I’ve been there only once. Maybe twice. I’m trying to divorce myself from certain places that I know are just bad news for me.
I think all the rain we got over the beginning of the month got me searching for comfort foods and I’m still on that kick. I’ve been craving cheeseburgers. Bacon cheeseburgers. But I’ve been avoiding buns and bread for obvious reasons. So, why not make a soup with all the familiar flavours of a bacon cheeseburger? Here’s what I threw together in a pot:
Even with the air conditioning running 24/7, it has been a brutal summer. Brutal enough that I cringe at the thought of turning on the oven, as I’ve mentioned in earlier posts. I’ve been missing lasagna. So, I decided to experiment with my crockpot (slow-cooker) today. Here’s what I got.
There are going to be people who look at this and say, “That’s not Stroganoff!!” and I will say, wholeheartedly, that they are correct. This is more of a Stroganoff-inspired dish that was more about using up some ingredients in my fridge before their best before dates and less about being authentic.
Hubby came home with a lot of ground beef this week. I think he was trying to tell me that he was really missing red meat, as we generally do a lot with chicken. But after making my pot roasts a few weekends ago for him and my mom, I think he’s got the “red meat bug” — which is absolutely fine because variety is the spice of life!
But what to do with it? One package went into a pasta sauce over fettucini noodles at the start of the week. Nothing fancy, but it was filling and it was a homemade sauce that wasn’t super-loaded with preservatives and such. These three? If I didn’t do something with them soon, they were heading for the freezer and would end up in another sauce, likely. I didn’t want burgers. But hey, wait… what about meatloaf? It’s easy to make.
